Recipe: Black Beans with Onion and Spinach

Enjoy alongside your favorite protein, or over 1/2 cup brown rice. Serves 4.


  • 1 cup diced white onion
  • 1 tablespoon olive oil
  • 1 can of black beans (15.25oz), drained and rinsed
  • 1.5 cups fresh spinach, chopped
  • Salt, garlic powder, and ground cumin to taste (Remember, you can always add more spices if you want, but not take away, so start with small amounts!)

In a small pot sauté onion in olive oil over medium heat, stirring occasionally. When onion pieces start to become translucent, add beans and spices to the pot and mix together. Turn heat to low, cover, and simmer for 15-20 minutes.

2 minutes before serving add chopped spinach to pot and stir just until spinach starts to wilt. If you cook spinach for too long, you’ll cook out all the great nutrients it has! Enjoy right away (:
